Why reconsider? In my situation, not being super fluent with Joomla, I reckon that it might be the same replicating the older layout that to start a new one, in terms of learning curve...but I might be wrong of curve.
Also in what respects is the protostar layout outdated?

Cassiopea and Protostar block models are significantly different. In Cassiopea, you can reproduce the appearance as was in Protostar using CSS. But for this you will need deep skills. In fact, this is the same as you had an old Opel, you bought a new Mercedes, but you want to make its appearance like old Opel. If you are not super fluent with Joomla / HTML / CSS, you will have to hire someone for this task.

Take a look at another template. For example, Helix Ultimate has boxed layout on board. Through CSS it is easier than Cassiopea to lead to the appearance of Protostar. But again, skills are required.

Outdated in all aspects appearance, responsiveness, accessibility.
